Rules on cattle slaughtering in Azerbaijan

The Food Safety Agency of Azerbaijan has announced the rules which are necessary for compliance during cattle slaughtering.

According to the Agency cattle slaughtering should be carried out in accordance with veterinary, sanitary and hygienic requirements. The farm where cattle are raised must meet veterinary and sanitary requirements.

Veterinary and sanitary requirements for slaughter of cattle in AzerbaijanIt is allowed to slaughter only healthy cattle inspected by a veterinarian. The above requirements shall be strictly observed in the bottomhole points. The tool used for slaughtering must be sanitized, and the butcher must be decked out in special form.

Additionally, in the further process, subsequent must be implemented, meat and internal offal must go through the veterinary and sanitary examination, in order to extend the shelf life of the carcass; and offal should be frozen, when transporting meat and offal to sales points hygiene rules must be strictly implemented.

The quality of meat depends on the breed, age, sex, lean of livestock meat.
