USMEF conducted U.S. Beef Secondary Cuts Cutting & Cooking Demo for Georgia country Retail and HRI market players on October 24, 2022.

Invited chef speaker Jorge Seviliya will introduce Chuck Roll, Flanks, Outside Skirts, and Brisket, secondary cut fabrication, best cooking methods, rubs, marinades, sauces, servicing.
Participants were able to get full information about alternative cuts of American beef, evaluate its palatability and learn about its high quality and food safety.
Chief Jorge also demonstrated how to implement portion control for processors.
The guests of the event were shown brisket dishes – pastrami and Texas-style smoked brisket.
