Premium ribeye steaks manage to be counterfeited
The sfera.fm portal reported that a video has appeared on YouTube showing the process of counterfeiting premium meat.
Ribeye steak is a whole piece of meat that is cut from the dorsal portion of a bull's rib cage. A piece of this meat is characterized by the presence of many fatty layers, which soften the structure of the meat and give a rich taste. But the appearance of these fat layers is the result of proper feeding, and here both the quality of the feed itself and its duration are important. Bulls graze freely in the pasture and have access to artesian water. Therefore, rib eye steaks tend to have a high price tag in a restaurant.
But there is a way to make a dish from cheaper pieces of brisket that will look like a ribeye and practically do not differ from the original: glue the pieces of meat using microbial transglumitanase (mTG). It is also called "meat glue". Pieces of brisket are lubricated with this composition, form a piece similar in appearance to a ribeye and frozen. The result is a meat mass with veins like a premium steak. But a fake can give out empty cavities inside the steak when slicing.
Since 2020, the use of mTG has been banned in Russia, as the enzyme is not recognized as safe. According to the Rosselkhoznadzor, European scientific studies show a link between mTG use and several autoimmune diseases. However, it is difficult to detect its presence, so some restaurants may use a prohibited enzyme in their dishes.
