Tripe In Green Tomatillo

 Ingredients:

Beef tripe - 2 lb
White onion in small cube - 3 oz
Garlic finely chopped - 1 oz
Oil - 1 oz
Beef stock - 1 Qt
Green tomatoes - 2 lb

Spices:

Salt - as needed
Pepper - as needed
Guajillo chilis, rehydrated and dveined - 2 ea.
Coriander leaves - 1/4 cup
Chipotle adobo sauce - 1 oz 

1. Cook the beef tripe in abundant water and salt, rinse thoroughly and reserve.

2. Saute the garlic and onion in hot oil, add the green tomatoes and fry them.

3. Add the chilies and the beef stock, add the beef tripe and simmer.

4. Finish with the chipotle adobo sauce and the coriander leaves, season with salt and pepper.
